Just brought a Canon GP and shoot in RAW, then convert to TIFF then finally
JPEG. However, all the EXIF information dissapears. Whta can I do to make
sure it's there with the final image?

Get "exiftool", and use it to copy Exif data from the
RAW file to your JPEG file.

Save the JPEG directly from editing the RAW - TIFF doesn't support EXIF.
