I would opt for the G7. Cropping occurs after the act of taking the
picture so, unless you can crop on the fly while actually taking the
photograph, the zoom won't help you during post processing. Plus, the
G7 is a better overall camera, IMO. Another option with the G7 would be
to get a 2X multiplier lens. It won't be as good as the dedicated zoom
of the S3IS but it might let you have the best of both worlds.

Assuming you mean deer in the wild, the 12x zoom of the S3 IS will certainly
be of more use to you than the 10 megapixels of the G7. You wouldn't be able
to crop the G7 images enough to equal the much greater magnification of the
S3 without losing most of the G7's resolution in the first place, and
radical cropping brings other image problems as well.

I have the Canon S2 IS and it's a nice little camera. It pretty much does
what you can reasonably expect it to do. But if I were buying a stabilized
superzoom of this type today (and I might) I think I'd get the Panasonic FZ7
or maybe an FZ30 instead of the Canon S3. I have an older Panasonic
superzoom, the FZ15, and I prefer it to the Canon. The Leica Vario-Elmarit
lenses on these Panasonics are just spectacular. All the models mentioned
have stabilized 12x zooms.
