I have always used Cybershot cameras and grown used to their saturated
warm colors. Now I have my first Lumix (DMC-TZ3 with a nice zoom from
wide) but am pretty shocked by the coldness of the colors often when
set to AWB. Veering towards blue and green. Is there any way of
changing this? Or adjusting for it?

Can't say I've particularly noticed this on my TZ3 but then I've come
from a Nikon not a Sony. Perhaps try using Vivid or warm colour
setting?
I remember one of the the reviews saying that the TZ3 tends to over
saturate the reds, though again i haven't particularly noticed, though
certainly looking at the test card on that review I could see the red
square popping out of the card compared to the other colours (sorry
can't remember which review it was now). Certainly DPreview reckons
the white balance and colours are quite natural. Perhaps it's just
what you're used to. Certainly adjust it though if you prefer it
warmer!

I agree, and yes there is. I can't speak for the TZ3 but all
Lumix cameras I've used allow you to fine-tune WB. I usually
make them about 200K warmer than their default.

Don't use the idiot mode, use one of the normal
P/A/S/whatever exposure mode. Press the up arrow a couple of
times until you come to the WB compensation. L/R arrows to
adjust, down arrow to finish.
